200ml recently pressed lemon juice
500g caster sugar

For the Premix (makes 850ml, serving 10)

For the Syrup: Put every ingredients inside a saucepan, heat until it reaches a simmer, stirring to dissolve. After that, turn off the stove allowing it to reach room temperature entirely. Transfer into an sealable bottle, cap it and store in the fridge, where it will keep for around a month.

To make Premix: Mix every spirits and syrup into a big jug, leave to sit for one hour, then pass it through , ideally through cheesecloth, to ensure it's completely strained.

When ready to serve: Measure 85ml of your premix to a mixing glass filled with ice, and agitate carefully for a minute to cool it down. Pour into a chilled martini glass or equivalent, garnish with a few cranberries and complete it with a quick spritz with the mandarin essence above the glass.
